Equipment

  • Mixing Bowls
  • Whisk or electric mixer
  • Measuring cups and spoons
  • Parfait glasses or small jars
  • Spoon or small spatula

Ingredients

For the Strawberry Layer

  • 2 cups fresh strawberries hulled and sliced
  • 2 tablespoons sugar optional, for macerating the berries
  • 1 teaspoon fresh lemon juice

For the Cream Layer

  • 1 cup Greek yogurt plain or vanilla
  • ½ cup heavy cream whipped to soft peaks
  • 2 tablespoons honey or maple syrup

For the Crunch Layer

  • 1 cup granola or crushed digestive biscuits
  • 2 tablespoons chopped nuts optional, for extra crunch

Instructions

Step 1: Prepare the Strawberries

  • Hull and slice your fresh strawberries into even pieces.
  • In a small bowl, toss the strawberries with sugar (if using) and lemon juice.
  • Pro Tip: Let the berries sit for 5–10 minutes. This macerates them, making them juicier and sweeter.

Step 2: Whip the Cream

  • Pour the heavy cream into a mixing bowl.
  • Using a whisk or electric mixer, whip the cream until soft peaks form.
  • Pro Tip: Chill the bowl and whisk for a few minutes before whipping. It helps the cream reach soft peaks faster.

Step 3: Mix the Yogurt Layer

  • In another bowl, combine Greek yogurt with honey or maple syrup.
  • Stir gently until smooth and creamy.

Step 4: Assemble the Parfaits

  • Start by spooning a layer of yogurt mixture into the bottom of your parfait glasses or jars.
  • Add a layer of granola or crushed biscuits on top of the yogurt.
  • Spoon a layer of macerated strawberries over the granola.
  • Repeat the layers until the glass is full, ending with a few strawberries on top for garnish.
  • Pro Tip: Press layers down gently with the back of a spoon to create clean, even layers.

Step 5: Add Final Touches

  • Sprinkle chopped nuts or drizzle a little honey over the top layer if desired.
  • Chill in the fridge for 30 minutes to let the flavors meld together.
  • Pro Tip: Serve cold for the best texture and fresh strawberry flavor.
