- 1 tsp salt for pasta water
For the Roasted Tomato Sauce
- 2 lbs 900 g cherry or grape tomatoes, halved
- 3 tbsp olive oil
- 4 cloves garlic minced
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp red pepper flakes optional, for a little kick
- ½ cup fresh basil leaves torn
- ¼ cup grated Parmesan cheese plus extra for serving
Preheat the Oven and Prepare Tomatoes
Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper.
Wash and halve the cherry tomatoes, then place them on the sheet.
Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
