Equipment

  • Large skillet or frying pan
  • Cutting Board and Sharp Knife
  • Mixing spoon or spatula
  • 9x13-inch baking dish
  • Cheese grater (optional but worth it)
  • Measuring cups and spoons

Ingredients

For the casserole:

  • 1 lb ground beef
  • 1 small onion diced
  • 2 –3 cloves garlic minced
  • 1 packet taco seasoning or 2–3 tbsp homemade seasoning
  • 1/2 cup water
  • 1 cup salsa
  • 1 cup corn frozen, canned, or fresh
  • 1 can 15 oz black beans, drained and rinsed
  • 2 cups tortilla chips lightly crushed (or 8–10 small tortillas, chopped)
  • 2 cups shredded cheddar cheese

Optional toppings:

  • Sour cream
  • Chopped tomatoes
  • Sliced jalapeños
  • Fresh cilantro
  • Avocado or guacamole

Instructions

Step 1: Cook the ground beef base

  • Start by placing a large skillet over medium heat and letting it warm up for a minute or two.
  • Add the ground beef and break it apart with a spatula as it cooks.
  • Let it brown fully, stirring occasionally so it cooks evenly.
  • Once the beef is no longer pink, drain excess fat if needed to keep the casserole from becoming greasy.
  • Pro tip: Don’t rush the browning step—letting the beef get a little golden adds deeper flavor to the whole dish.

Step 2: Add aromatics and seasoning

  • Add the diced onion directly into the cooked beef.
  • Stir and cook for about 2–3 minutes until the onion starts to soften.
  • Add minced garlic and cook for another 30–60 seconds until fragrant.
  • Sprinkle in the taco seasoning and pour in the water.
  • Stir everything well so the seasoning coats the beef evenly.
  • Pro tip: Keep stirring while the seasoning mixes in so it doesn’t clump at the bottom of the pan.

Step 3: Build the filling

  • Add the salsa, corn, and black beans into the skillet.
  • Stir everything together until well combined and evenly coated.
  • Let it simmer for about 3–5 minutes so the flavors can blend together.
  • Remove from heat once the mixture is slightly thickened and flavorful.

Step 4: Layer the casserole

  • Lightly grease a 9x13 inch baking dish.
  • Spread a layer of crushed tortilla chips (or chopped tortillas) across the bottom.
  • Spoon half of the beef mixture over the chips and spread evenly.
  • Sprinkle a layer of shredded cheese over the top.
  • Repeat with another layer of chips, remaining beef mixture, and finish with a generous layer of cheese.
  • Pro tip: Don’t press the layers down too tightly—keeping them slightly loose helps everything bake evenly and stay a little textured.

Step 5: Bake to perfection

  • Preheat your oven to 375°F (190°C) if you haven’t already.
  • Place the casserole in the oven and bake for 15–20 minutes.
  • Watch for the cheese to fully melt and turn slightly golden and bubbly around the edges.
  • Remove carefully and let it rest for about 5 minutes before serving.
  • Pro tip: Letting it rest helps the layers set so you get cleaner, easier scoops instead of a runny casserole.

Step 6: Add toppings and serve

  • Top the casserole with your favorite fresh toppings like sour cream, chopped tomatoes, cilantro, or avocado.
  • Slice or scoop into portions while still warm.
  • Serve immediately and enjoy every cheesy, flavorful bite.
