- 2 medium sweet potatoes peeled and diced
- 1 small yellow onion diced
- 2 cloves garlic minced

- 1 cup baby spinach optional

Step 1: Prep your ingredients
Peel and dice the sweet potatoes into small, even cubes (about ½ inch) for quicker cooking.
Dice the onion and mince the garlic.
If using spinach, rinse and pat it dry.
Shred the cheese and chop the parsley if you're using them for garnish.
