Equipment

  • Blender or Food Processor
  • Medium saucepan
  • Wooden Spoon or Silicone Spatula
  • Measuring cups and spoons
  • Knife and Cutting Board

Ingredients

  • 2 cups cottage cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk adjust for consistency
  • 1 small jalapeño finely chopped (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt adjust to taste
  • 1 tablespoon butter
  • 1 tablespoon cornstarch optional, for extra thickness

Instructions

Step 1: Blend the cottage cheese base

  • Add the cottage cheese, milk, garlic powder, onion powder, smoked paprika, and salt into a blender or food processor.
  • Blend until completely smooth and creamy, scraping down the sides as needed.
  • Pro tip: Blend a little longer than you think you need to. The smoother the base, the more “real queso” it will taste like.

Step 2: Prepare your pan

  • Place a medium saucepan over low to medium heat and add the butter.
  • Let it melt slowly without browning.
  • Once melted, pour in the blended cottage cheese mixture.
  • Pro tip: Keep the heat low at this stage so the mixture doesn’t separate or turn grainy.

Step 3: Melt in the cheese

  • Stir in the shredded cheddar cheese gradually, a handful at a time.
  • Keep stirring until each addition melts fully before adding more.
  • Pro tip: Stir continuously to keep the texture smooth and prevent clumping at the bottom of the pan.

Step 4: Adjust consistency and spice

  • If the dip feels too thick, add a splash of milk and stir until you reach your desired texture.
  • Add chopped jalapeños (or any spice add-ins) and mix well.
  • Taste and adjust salt or seasoning if needed.
  • Pro tip: Add milk slowly—just a little at a time—so you don’t accidentally make the dip too runny.

Step 5: Serve warm and enjoy

  • Once everything is melted, smooth, and well combined, remove from heat.
  • Transfer to a serving bowl and serve immediately while warm and creamy.
  • Pro tip: If it thickens while sitting, just stir in a tiny bit of warm milk to bring it back to life.
